Mexican Tofu Scramble

Ingredients

The scramble

  • ½ medium red onion, chopped
  • 2 cloves garlic, minced
  • 1 medium red pepper, diced
  • ½ package extra firm tofu
  • to taste diced green chiles
  • to taste chili powder
  • to taste cumin
  • to taste cilantro, chopped
  • to taste salt and pepper

For serving

  • as needed whole wheat tortillas
  • as needed diced tomatoes
  • as needed diced avocado
  • as needed fresh salsa
  • as needed shredded cheese

Instructions

  1. Press the tofu between two plates to drain the liquid for about 15 minutes.
  2. In a large skillet, sauté the onion, garlic, and red pepper in olive oil until tender.
  3. Crumble the pressed tofu into the skillet and add the diced green chiles.
  4. Season with chili powder, cumin, cilantro, salt, and pepper to taste.
  5. Cook the mixture for about 5-7 minutes, adjusting seasonings as desired.
  6. Serve the scramble in whole wheat tortillas.
  7. Top with diced tomatoes, avocado, fresh salsa, and cheese.
