Instructions
- Press the tofu between two plates to drain the liquid for about 15 minutes.
- In a large skillet, sauté the onion, garlic, and red pepper in olive oil until tender.
- Crumble the pressed tofu into the skillet and add the diced green chiles.
- Season with chili powder, cumin, cilantro, salt, and pepper to taste.
- Cook the mixture for about 5-7 minutes, adjusting seasonings as desired.
- Serve the scramble in whole wheat tortillas.
- Top with diced tomatoes, avocado, fresh salsa, and cheese.
