Crustless Winter Quiche

Ingredients

Vegetables

  • 1 large Yellow Onion
  • 1 medium Red Bell Pepper
  • 2 small Zucchini

Meat

  • ½ pound Italian Sausage

Dairy & Eggs

  • 6 large Eggs
  • cup Non-Dairy Milk

Oils & Seasonings

  • 3 tablespoons Olive Oil
  • 2 teaspoons Oregano
  • 1 teaspoon Paprika
  • ½ teaspoon Ground Black Pepper
  • 1 pinch Salt

Instructions

  1. Slice the onions, bell pepper, and zucchini and set aside.
  2. Heat olive oil in a skillet over medium heat and sauté the onions for 5-6 minutes until softened.
  3. Add the bell pepper, zucchini, and Italian sausage to the skillet along with the oregano, paprika, and black pepper. Cook for another 5-7 minutes until the sausage is browned.
  4. While the vegetables are cooking, preheat the oven to 350°F.
  5. Grease a quiche dish with olive oil.
  6. Transfer the cooked vegetable and sausage mixture into the greased dish.
  7. In a separate bowl, whisk together the eggs and non-dairy milk.
  8. Pour the egg mixture into the quiche dish.
  9. Bake for 45-50 minutes until the edges begin to brown.
  10. Once cooled, slice and enjoy.
