Ingredients

The vegetables

  • cups sliced yellow squash
  • cups sliced zucchini
  • 1 large orange bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme

The egg mixture

  • 3 large eggs
  • 3 large egg whites
  • ¾ cup milk
  • ¾ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

The cheese

  • cup shredded cheese
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Sauté the sliced squash, zucchini, chopped pepper, garlic, and thyme in a skillet for 6-7 minutes until tender.
  2. Preheat the oven to 350°F (177°C) and prepare a pie dish with nonstick spray.
  3. In a bowl, whisk together the eggs, egg whites, milk, salt, and pepper.
  4. Arrange the cooked vegetables in the prepared dish, top with shredded cheese, and pour the egg mixture over it.
  5. Sprinkle grated parmesan cheese on top and bake for 45 minutes until set.
  6. Allow to cool for 10 minutes before slicing and serving.
