Instructions
- Sauté the sliced squash, zucchini, chopped pepper, garlic, and thyme in a skillet for 6-7 minutes until tender.
- Preheat the oven to 350°F (177°C) and prepare a pie dish with nonstick spray.
- In a bowl, whisk together the eggs, egg whites, milk, salt, and pepper.
- Arrange the cooked vegetables in the prepared dish, top with shredded cheese, and pour the egg mixture over it.
- Sprinkle grated parmesan cheese on top and bake for 45 minutes until set.
- Allow to cool for 10 minutes before slicing and serving.
