Crustless Spinach Quiche

Ingredients

  • 1 lb breakfast sausage
  • ½ unit onion, diced
  • 2 cups mushrooms, sliced
  • 6 cups spinach, roughly chopped
  • 12 unit eggs
  • ¼ – ½ cup coconut milk
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Chop the onion and mushrooms.
  3. Heat a cast iron or oven-safe pan over medium heat and add the sausage and onion, cooking until browned.
  4. Add the mushrooms and cook for an additional 2 minutes.
  5. While the sausage cooks, chop the spinach.
  6. In a large bowl, crack the eggs and add the coconut milk, whisking until well combined.
  7. Add the spinach and seasonings to the egg mixture.
  8. Once the sausage is cooked, combine it with the egg mixture and stir well.
  9. Grease the pan with sausage fat or oil, then pour the mixture back into the pan.
  10. Bake for 30 minutes or until the egg is set and the top is brown.
