Crustless Spinach Quiche

Instructions
- Preheat the oven to 400°F.
- Chop the onion and mushrooms.
- Heat a cast iron or oven-safe pan over medium heat and add the sausage and onion, cooking until browned.
- Add the mushrooms and cook for an additional 2 minutes.
- While the sausage cooks, chop the spinach.
- In a large bowl, crack the eggs and add the coconut milk, whisking until well combined.
- Add the spinach and seasonings to the egg mixture.
- Once the sausage is cooked, combine it with the egg mixture and stir well.
- Grease the pan with sausage fat or oil, then pour the mixture back into the pan.
- Bake for 30 minutes or until the egg is set and the top is brown.
