Ingredients

The quiche

  • 3 links sweet Italian turkey or chicken sausage
  • 12 ounces baby spinach
  • 1 cup grated light havarti or cheddar
  • ¼ cup grated parmesan cheese
  • cup 2% milk
  • ¼ cup half & half cream
  • 5 large eggs
  • ¾ teaspoon kosher salt
  • teaspoon ground black pepper
  • pinch freshly grated nutmeg

For preparation

  • 1 can cooking spray

Instructions

  1. Preheat the oven to 350°F and spray a pie dish with oil.
  2. Cook the sausage in a skillet over medium heat, breaking it up until cooked, about 5 minutes.
  3. Add the spinach and reduce the heat to low, cooking until wilted, about 7 minutes, then drain well.
  4. Spread the spinach and sausage mixture evenly in the prepared dish and top with grated havarti and parmesan cheese.
  5. Whisk together the milk, half and half, eggs, salt, black pepper, and nutmeg to make the custard mixture.
  6. Pour the custard into the dish and bake for 35 to 40 minutes until the center is set.
  7. Cut the quiche into 6 pieces and serve.
