Easy Fish Tacos with Slaw and Chipotle Sauce

Ingredients

The sauce

  • 1 cup sour cream or plain yogurt
  • ½ cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1 ½ tablespoons adobo sauce
  • 1 clove garlic
  • ¼ teaspoon salt
  • as desired none lime juice

The fish

  • 1 bottle beer
  • 1 teaspoon salt
  • 1 pound white fish like cod or tilapia filets
  • 1 ½ tablespoons taco seasoning
  • to taste none salt
  • 1 tablespoon neutral oil like avocado oil

The slaw

  • 1 16-ounce bag coleslaw mix
  • ½ cup chipotle sauce from above

Toppings

  • 6-8 tortillas your choice: flour, corn, cassava
  • as desired none pico de gallo
  • as desired none queso fresco, crumbled
  • as desired none fresh cilantro, chopped

Instructions

  1. Marinate the fish in beer and salt.
  2. Prepare the chipotle sauce by blending all ingredients until smooth.
  3. Mix the coleslaw with half of the chipotle sauce and lime juice, then set aside.
  4. Remove fish from the marinade, dry it, and season with taco seasoning and salt.
  5. Pan-sear or grill the fish until cooked through.
  6. Warm the tortillas and assemble the tacos with fish, slaw, and additional toppings.
