Ingredients

Cumin Lime Coleslaw

  • ¼ cup mayonnaise
  • 1 Tbsp lime juice
  • ½ tsp ground cumin
  • tsp cayenne
  • ½ tsp sugar
  • ¼ tsp salt
  • ½ 16oz. bag coleslaw mix (shredded cabbage and carrots)
  • 2 pieces green onions, sliced

Tacos

  • 8 small corn tortillas
  • 2 tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp garlic powder
  • tsp salt
  • 1 Tbsp cooking oil
  • 1 lb. cod fillets
  • 1 piece avocado, sliced
  • 1 piece jalapeño, sliced

Instructions

  1. Toast the tortillas in a dry skillet until browned on each side and keep warm.
  2. Prepare the cumin lime coleslaw by mixing mayonnaise, lime juice, cumin, cayenne, salt, and sugar in a bowl.
  3. Add the coleslaw mix and sliced green onions to the dressing and stir to combine, then refrigerate.
  4. Season the fish fillets with a mix of chili powder, cumin, garlic powder, and salt, then cut into taco-sized pieces.
  5. Heat half of the cooking oil in a skillet and cook half of the fish until cooked through, then repeat with the remaining fish.
  6. Assemble the tacos by placing fish, avocado, cumin lime slaw, and jalapeño on each tortilla.
