Individual Chocolate Hazelnut Pies

Ingredients

The crust

  • 1 cup walnut meal flour or almond meal flour
  • ½ cup coconut flour
  • 1 teaspoon baking soda
  • 3 tablespoons flax seed meal or 1.5 tablespoons chia seed meal
  • ¼ cup applesauce
  • 2 tablespoons applesauce
  • 1 tablespoon apple cider vinegar
  • 8 drops vanilla liquid stevia (optional)
  • 1 tablespoon honey
  • ¼ cup coconut oil, liquified

The filling

  • 1 batch chocolate hazelnut spread

For topping

  • to taste chopped hazelnuts

Instructions

  1. Make the chocolate hazelnut spread and let it cool to room temperature.
  2. Combine all crust ingredients with an electric mixer.
  3. Divide the crust dough into six 4 x .75 tart/quiche pans and press evenly across the bottom.
  4. Place the pans on a cookie sheet and bake the crust for about 12 minutes.
  5. Once the crust is completely cool, pour the chocolate hazelnut spread evenly into each crust.
  6. Sprinkle chopped hazelnuts on top of the filling.
  7. Store the pies in the fridge until ready to serve, allowing them to come to room temperature before serving.
