Ingredients

Batter

  • 3 cups gluten-free oats
  • 2 tsp cinnamon
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • cup berry applesauce
  • 2 cups blueberries
  • ¼ cup honey
  • 1 egg egg (or 1 flax egg if vegan)
  • 1 Tbsp water
  • 1 tsp vanilla extract

Filling

  • 2 cups blueberries
  • ¼ cup honey
  • ¼ cup 100% pomegranate juice
  • 1 tsp vanilla extract
  • 2 Tbsp cornstarch
  • 1 Tbsp water (mixed together to form a paste)

Instructions

  1. Preheat the oven to 375°F and grease an 8x8 glass dish.
  2. For the filling, heat blueberries, honey, and pomegranate juice in a saucepan until boiling, then stir in vanilla and cornstarch/water paste until thickened.
  3. For the batter, pulse half the oats into a coarse flour, then mix with remaining oats, cinnamon, baking powder, and salt in a bowl.
  4. Add applesauce, honey, water, and vanilla to the dry ingredients and mix well.
  5. Spread half of the batter in the greased dish, then layer the blueberry filling on top.
  6. Top with the remaining batter, smoothing it out evenly.
  7. Bake for about 30 minutes until lightly browned, then cool for 20-30 minutes before cutting into squares.
