Instructions
- Preheat the oven to 375°F and grease an 8x8 glass dish.
- For the filling, heat blueberries, honey, and pomegranate juice in a saucepan until boiling, then stir in vanilla and cornstarch/water paste until thickened.
- For the batter, pulse half the oats into a coarse flour, then mix with remaining oats, cinnamon, baking powder, and salt in a bowl.
- Add applesauce, honey, water, and vanilla to the dry ingredients and mix well.
- Spread half of the batter in the greased dish, then layer the blueberry filling on top.
- Top with the remaining batter, smoothing it out evenly.
- Bake for about 30 minutes until lightly browned, then cool for 20-30 minutes before cutting into squares.
