Blueberry Almond Chia Squares

Ingredients

Dry Ingredients

  • 2 cups regular rolled oats
  • 1 ¼ cups oat flour
  • 1 tsp cinnamon
  • ½ tsp kosher salt
  • 2 tbsp chia seeds
  • ½ cup Sucanat or brown sugar

Wet Ingredients

  • 1 tbsp nut butter
  • ¼ cup applesauce
  • ¼ cup brown rice syrup
  • 2 tsp vanilla extract
  • 1 tsp almond extract

Add-ins

  • 1 cup fresh blueberries
  • cup chopped almonds

Instructions

  1. Preheat the oven to 350°F and line an 8” x 8” square pan with parchment paper.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate bowl, whisk the wet ingredients together and then combine with the dry ingredients.
  4. Fold in the blueberries and chopped almonds, then spread the mixture into the prepared pan, pressing it firmly.
  5. Bake for about 30 minutes, then allow to cool completely before cutting into squares.
