Ingredients

Dry Ingredients

  • cups regular rolled oats
  • 3 tbsp chia seed
  • ½ cup ground flax
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp kosher salt

Wet Ingredients

  • cups almond milk
  • ½ cup pure maple syrup
  • 2 tbsp nut or seed butter
  • 1 medium banana, chopped small
  • 1 tbsp pure vanilla extract
  • to taste dry sweetener

Instructions

  1. Preheat the oven to 350°F and line an 8-inch square pan with parchment paper.
  2. Blend 1 cup of oats in a blender or food processor until it forms a flour, or use oat flour.
  3. In a large bowl, mix the dry ingredients: oat flour, remaining oats, chia, flax, baking powder, salt, and cinnamon.
  4. In a separate bowl, whisk the wet ingredients: milk, syrup, nut/seed butter, banana, and vanilla until smooth.
  5. Combine the wet and dry ingredients and stir until mixed. Add sweetener if desired and fold in any additional nuts or dried fruit.
  6. Pour the mixture into the prepared pan and smooth it out.
  7. Bake for 35-40 minutes until golden and springy to touch. Let cool for 10 minutes before slicing.
