Instructions
- Preheat the oven to 350°F and line an 8-inch square pan with parchment paper.
- Blend 1 cup of oats in a blender or food processor until it forms a flour, or use oat flour.
- In a large bowl, mix the dry ingredients: oat flour, remaining oats, chia, flax, baking powder, salt, and cinnamon.
- In a separate bowl, whisk the wet ingredients: milk, syrup, nut/seed butter, banana, and vanilla until smooth.
- Combine the wet and dry ingredients and stir until mixed. Add sweetener if desired and fold in any additional nuts or dried fruit.
- Pour the mixture into the prepared pan and smooth it out.
- Bake for 35-40 minutes until golden and springy to touch. Let cool for 10 minutes before slicing.
