Instructions
- Preheat the oven to 375°F and line an 8-inch square pan with parchment paper.
- Mix cornstarch with warm water in a small bowl to form a paste and set aside.
- In a saucepan, combine berries, banana, and maple syrup, bring to a boil, then stir in vanilla and the cornstarch mixture.
- Process 1.5 cups of oats into a flour, then mix with remaining oats, baking powder, and salt in a large bowl.
- Add wet ingredients to the oat mixture and mix well. Spread 2/3 of the batter in the prepared pan.
- Pour the berry filling over the oat base, then crumble the remaining oat mixture on top.
- Bake for 30 minutes or until the top is golden and firm. Let cool for at least 20 minutes before cutting into squares.
