Ingredients

The berry filling

  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, chopped
  • 1 large ripe banana, chopped
  • ¼ cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 2 tbsp cornstarch
  • 2 tbsp warm water

The base

  • 3 cups regular oatmeal, divided
  • tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp kosher salt
  • ½ cup unsweetened applesauce
  • ¼ cup pure maple syrup
  • ¼ cup water
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and line an 8-inch square pan with parchment paper.
  2. Mix cornstarch with warm water in a small bowl to form a paste and set aside.
  3. In a saucepan, combine berries, banana, and maple syrup, bring to a boil, then stir in vanilla and the cornstarch mixture.
  4. Process 1.5 cups of oats into a flour, then mix with remaining oats, baking powder, and salt in a large bowl.
  5. Add wet ingredients to the oat mixture and mix well. Spread 2/3 of the batter in the prepared pan.
  6. Pour the berry filling over the oat base, then crumble the remaining oat mixture on top.
  7. Bake for 30 minutes or until the top is golden and firm. Let cool for at least 20 minutes before cutting into squares.
