Ingredients

The filling

  • 2 Tablespoons Avocado Oil
  • 1 Onion diced
  • 3 Cloves Garlic
  • 1 Pound Ground Chicken
  • 2 Teaspoons Paprika
  • 2 Teaspoons Cumin
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • ½ Teaspoon Chipotle Pepper
  • ½ Cup Mild Red Enchilada Sauce

The tacos

  • 12 Thin Corn Tortillas
  • 1 ½ Cups Mexican-Blend Shredded Cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Heat avocado oil in a pan over medium heat.
  3. Sauté diced onion and garlic for 3-4 minutes.
  4. Add ground chicken and break it into small pieces while cooking.
  5. Once the chicken is nearly cooked, add spices and stir until fully incorporated.
  6. Pour in the enchilada sauce and mix until combined, then remove from heat.
  7. Wrap tortillas in a damp towel and microwave for 30 seconds to soften.
  8. On one side of each tortilla, add cheese, then a scoop of the chicken mixture, and more cheese.
  9. Fold the tortillas and place them on a lined baking sheet.
  10. Cover with another baking sheet and bake for 18 minutes, removing the top tray after 15 minutes.
  11. Broil for an additional 2-3 minutes for crispiness, watching carefully to avoid burning.
  12. Remove from the oven and serve.
