Instructions
- Preheat the oven to 400°F.
- Heat avocado oil in a pan over medium heat.
- Sauté diced onion and garlic for 3-4 minutes.
- Add ground chicken and break it into small pieces while cooking.
- Once the chicken is nearly cooked, add spices and stir until fully incorporated.
- Pour in the enchilada sauce and mix until combined, then remove from heat.
- Wrap tortillas in a damp towel and microwave for 30 seconds to soften.
- On one side of each tortilla, add cheese, then a scoop of the chicken mixture, and more cheese.
- Fold the tortillas and place them on a lined baking sheet.
- Cover with another baking sheet and bake for 18 minutes, removing the top tray after 15 minutes.
- Broil for an additional 2-3 minutes for crispiness, watching carefully to avoid burning.
- Remove from the oven and serve.
