Ingredients

The filling

  • 2 tbsp avocado oil
  • ½ small onion, diced
  • 2 large carrots, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 lb ground chicken
  • cup blue cheese dressing (or ranch)
  • ½ cup buffalo sauce
  • 1 cup shredded mozzarella cheese

The tacos

  • 12 corn tortillas

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Heat a sauté pan over medium-high heat and add the avocado oil.
  3. Once hot, add the diced onion, carrots, and celery. Cook for 6-7 minutes until softened.
  4. Add the minced garlic and ground chicken, cooking until the chicken is no longer pink.
  5. Turn off the heat, drain excess liquid, and stir in the blue cheese dressing and buffalo sauce.
  6. Line the tortillas on the baking sheets, adding ½ cup of the meat mixture to one side of each tortilla, then sprinkle with mozzarella cheese.
  7. Place in the oven for 3 minutes until the cheese melts, then fold the tortillas in half using the melted cheese as glue.
  8. Bake for 20-25 minutes or until golden.
