Buffalo Chicken Baked Tacos

Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Heat a sauté pan over medium-high heat and add the avocado oil.
- Once hot, add the diced onion, carrots, and celery. Cook for 6-7 minutes until softened.
- Add the minced garlic and ground chicken, cooking until the chicken is no longer pink.
- Turn off the heat, drain excess liquid, and stir in the blue cheese dressing and buffalo sauce.
- Line the tortillas on the baking sheets, adding ½ cup of the meat mixture to one side of each tortilla, then sprinkle with mozzarella cheese.
- Place in the oven for 3 minutes until the cheese melts, then fold the tortillas in half using the melted cheese as glue.
- Bake for 20-25 minutes or until golden.
