Cinnamon and Brown Sugar Pull-Apart Bread

Ingredients

Dough

  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 ½ cups unbleached all-purpose flour
  • ½ cup sugar
  • 1 large egg
  • 2 teaspoons kosher salt
  • 2 ¼ teaspoons rapid-rise or instant yeast
  • as needed none olive oil or butter for greasing

Filling

  • ¾ cup sugar or brown sugar
  • 1 tablespoon ground cinnamon
  • 4 to 5 tablespoons unsalted butter, room temperature

Egg Wash

  • 1 beaten egg

Icing

  • 1 cup confectioners’ sugar
  • 2 tablespoons milk

Instructions

  1. Combine milk and butter, heat until butter melts and mixture is warm.
  2. Mix 1 cup flour, sugar, egg, and salt in a stand mixer, then add the warm milk mixture.
  3. Sprinkle yeast over the mixture and stir, then add remaining flour and mix until absorbed.
  4. Grease a bowl, transfer dough, cover, and let rise until doubled in volume (about 2 hours).
  5. Mix sugar and cinnamon in a bowl, punch down the dough, and divide it.
  6. Roll each half into a rectangle, spread with butter, sprinkle with cinnamon sugar, and roll into logs.
  7. Place logs seam side down on a baking sheet, make cuts, and pull sections outward.
  8. Let rise for about 40-45 minutes, then preheat oven to 375°F.
  9. Brush with beaten egg and bake for 15-20 minutes until golden.
  10. Cool slightly, whisk icing ingredients, and drizzle over the bread before serving.
