Ingredients

The dough

  • ¼ cup unsalted butter
  • 1 ½ cups all-purpose flour

  • teaspoon cardamom
  • ½ cup 1% low-fat milk
  • cup pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract

The filling

  • ¼ cup unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • teaspoon kosher salt

Instructions

  1. Brown the butter in a saucepan until it smells nutty and darkens in color.
  2. Combine the dry ingredients in a mixing bowl.
  3. Add the browned butter, warm milk, pumpkin, egg, and vanilla to the dry ingredients and mix until combined.
  4. Knead the dough until smooth and tacky, then let it rise until doubled in size.
  5. Prepare the filling by browning additional butter and mixing the sugars and spices.
  6. Roll the dough into a rectangle, spread the browned butter, and sprinkle with the filling.
  7. Slice the dough, stack the pieces, and place them in a greased loaf pan to rise again.
  8. Preheat the oven and bake the loaf until golden brown and cooked through.
  9. Let the bread cool slightly before removing from the pan and serve warm.
