Ingredients

Yudane

  • 50 g Bread flour/Baker's flour
  • 40 ml boiling water

Bread

  • 150 ml lukewarm milk
  • 1 tbsp sugar
  • 3 g dry instant yeast
  • 200 g Bread/Baker's flour
  • 1 tsp salt
  • 10 g unsalted butter
  • 10 g purple sweet potato powder
  • 20 ml water
  • 10 g kabocha pumpkin powder
  • 15 ml water
  • to taste Melted white and milk chocolate for decoration

Instructions

  1. Prepare Yudane the night before by mixing bread flour with boiling water and refrigerating overnight.
  2. Combine all bread ingredients in a bread machine and knead for 20 minutes.
  3. Make pastes from purple sweet potato and kabocha pumpkin powders by mixing each with water.
  4. Divide the dough into three parts for white, purple, and orange dough.
  5. Knead the purple and kabocha pastes into the respective dough parts.
  6. Place each dough in oiled bowls, cover, and let rise in a warm place for about 1 hour.
  7. Preheat the oven to 180°C.
  8. Punch down the dough, divide each part into 6 pieces, shape them, and place in a lined baking tin.
  9. Cover and let rise until doubled in size.
  10. Bake for about 20 minutes, checking occasionally to prevent over-browning.
  11. Cool slightly and decorate with melted chocolate before serving.
