Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper, spreading coconut in a single layer to toast for 5-7 minutes.
- Prepare another baking sheet with parchment or a silicone mat and whisk together flour, baking powder, baking soda, and salt in a bowl.
- In a stand mixer, beat together brown sugar and butter until creamy, then mix in vanilla, coconut extract, and egg before adding dry ingredients.
- Fold in the toasted coconut, toffee bits, and chocolate chips, then drop spoonfuls of dough onto the baking sheet.
