Ingredients

  • 1 cup flaked sweetened coconut
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoon salt
  • ¾ cup packed light brown sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon coconut extract
  • 1 large egg
  • 1 cup Heath toffee bits
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper, spreading coconut in a single layer to toast for 5-7 minutes.
  2. Prepare another baking sheet with parchment or a silicone mat and whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. In a stand mixer, beat together brown sugar and butter until creamy, then mix in vanilla, coconut extract, and egg before adding dry ingredients.
  4. Fold in the toasted coconut, toffee bits, and chocolate chips, then drop spoonfuls of dough onto the baking sheet.
  5. Bake for 10 minutes or until the edges are lightly browned, then cool completely on wire racks.
