Ingredients

The seasoning

  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes

The main ingredients

  • 1 tablespoon light butter
  • 16 oz wheat gnocchi
  • 1 lb 95% lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chunky salsa
  • 1 cup reduced sodium beef broth
  • 1 cup frozen corn kernels
  • ¼ cup fat free sour cream
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded
  • to taste chopped cilantro (optional)

Instructions

  1. 1. Mix the chili powder, cumin, salt, pepper, paprika, onion powder, garlic powder, oregano, and red pepper flakes in a small bowl to create taco seasoning.
  2. 2. In a large skillet, melt the butter over medium-high heat and add the gnocchi, cooking until golden on both sides.
  3. 3. Remove the gnocchi and set aside. In the same skillet, cook the ground beef, breaking it up until browned, then add the onion, garlic, and taco seasoning.
  4. 4. Stir until combined and the onions are softened, then drain if necessary.
  5. 5. Add the salsa, beef broth, corn, and reserved gnocchi to the skillet, bring to a boil, then cover and simmer for 5-8 minutes.
  6. 6. Remove from heat and stir in the sour cream and half of the cheddar cheese, then top with remaining cheese and cover until melted.
  7. 7. Garnish with cilantro if desired and serve.
