Instructions
- 1. Mix the chili powder, cumin, salt, pepper, paprika, onion powder, garlic powder, oregano, and red pepper flakes in a small bowl to create taco seasoning.
- 2. In a large skillet, melt the butter over medium-high heat and add the gnocchi, cooking until golden on both sides.
- 3. Remove the gnocchi and set aside. In the same skillet, cook the ground beef, breaking it up until browned, then add the onion, garlic, and taco seasoning.
- 4. Stir until combined and the onions are softened, then drain if necessary.
- 5. Add the salsa, beef broth, corn, and reserved gnocchi to the skillet, bring to a boil, then cover and simmer for 5-8 minutes.
- 6. Remove from heat and stir in the sour cream and half of the cheddar cheese, then top with remaining cheese and cover until melted.
- 7. Garnish with cilantro if desired and serve.
