Holly's Challah Bread

Ingredients

The dough

  • 4 to 5 cups all-purpose or bread flour
  • 1 packet instant yeast
  • 1 cup lukewarm water
  • 1 tablespoon kosher salt
  • ¼ cup honey
  • ½ cup safflower oil or other neutral oil
  • 2 eggs eggs

The egg wash

  • 1 egg beaten egg
  • 1 teaspoon water
  • to taste poppy seeds (optional)

Instructions

  1. Make the sponge by whisking 1 cup of flour with the yeast and stirring in lukewarm water; let it rise for about 45 minutes until puffy.
  2. Add salt, honey, oil, and eggs to the sponge, mix well, then add remaining flour until a sticky dough forms.
  3. Knead the dough briefly until smooth, then transfer to an oiled bowl and let it rise until doubled, about 1 to 2 hours.
  4. Punch down the dough, divide it into 3 or 4 parts, and roll each into long ropes; braid them into your desired shape.
  5. Let the braided dough rise on a greased baking sheet for about 30 minutes.
  6. Preheat the oven to 350ºF and brush the dough with egg wash, sprinkling with poppy seeds if desired.
  7. Bake for 45 to 50 minutes, checking after 40 minutes, then cool completely before slicing.
