Ingredients

  • 5 egg yolks egg yolks
  • 3 tablespoons unsalted butter
  • ¾ cup water
  • 1 egg white egg white (for glazing)
  • 3 cups bread flour
  • 2 tablespoons bread flour (additional)
  • ½ cup sugar
  • teaspoons fast-acting yeast
  • 1 teaspoon kosher salt

Instructions

  1. Whisk together the egg yolks and melted butter in a bowl, then add water and mix well.
  2. In a stand mixer, combine flour, sugar, yeast, and salt. Add the egg yolk mixture and mix until combined.
  3. Switch to the dough hook and knead the dough for about 10 minutes until soft, adding more flour if necessary.
  4. Preheat the oven to 350°F (176°C). Transfer the dough to an oiled bowl, cover, and let it rise in a warm place for 60–70 minutes.
  5. Turn the dough out onto a floured surface, knead by hand, and cut into 6 equal pieces. Let rest for 15 minutes.
  6. Roll each piece into a 10-inch log and tie into a knot. Place on a parchment-lined baking sheet.
  7. Brush the knots with beaten egg white and let them rise for 30 minutes.
  8. Bake for about 20 minutes until golden brown and shiny. Serve warm.
