Ingredients

  • 4 ½ teaspoons active dry yeast
  • ½ cup brown sugar
  • 1 ¾ cups lukewarm water
  • ½ cup olive oil
  • 5 large eggs
  • 1 tablespoon kosher salt
  • 4 - 4 ½ cups whole wheat pastry flour or white whole wheat flour
  • 4 cups all-purpose flour

Instructions

  1. Dissolve yeast and 1 tablespoon of brown sugar in lukewarm water and let sit for 5 minutes.
  2. Whisk in olive oil, then beat in 4 eggs one at a time, along with the remaining brown sugar and salt.
  3. Gradually add flour until the dough holds together, then knead on a floured surface for 5-10 minutes.
  4. Grease a bowl, place the dough inside, cover, and let it rise in a warm place for 1 hour.
  5. Punch down the dough, cover, and let it rise again for another 30 minutes.
  6. Divide the dough in half and form one half into 3 strands, then braid them together.
  7. If baking immediately, preheat the oven to 375°F. Brush the loaves with beaten egg and let them rise for another hour.
  8. Bake for 30-40 minutes until golden, then cool on a rack.
