Sambal Eggplant

Ingredients

  • 2 tablespoons oil
  • tablespoons dried shrimp, soaked in warm water and drained
  • 1½ - 2 tablespoons Sambal
  • 7 oz eggplant, cut into rounds or strips
  • ½ teaspoon sugar or to taste
  • 1 teaspoon fish sauce or to taste

Instructions

  1. Heat a wok or skillet with oil over medium to high heat.
  2. Add the dried shrimp and stir until aromatic.
  3. Add the Sambal, followed by the eggplant, and stir to combine without overcooking the eggplant.
  4. Add sugar and fish sauce to taste.
  5. Serve immediately.
