Instructions
- Heat a wok or skillet with oil over medium to high heat.
- Add the dried shrimp and stir until aromatic.
- Add the Sambal, followed by the eggplant, and stir to combine without overcooking the eggplant.
- Add sugar and fish sauce to taste.
- Serve immediately.
