Sambal Asparagus

Ingredients

  • 12 oz asparagus
  • 2 tablespoons oil
  • 1½ – 2 tablespoons sambal
  • 4 oz medium-sized shrimp
  • ½ teaspoon fish sauce or salt
  • ¼ teaspoon sugar
  • 1-2 tablespoons water

Instructions

  1. Rinse the asparagus and trim the tough ends, then slice the stems in half and cut into 2-inch lengths.
  2. Heat oil in a wok and add sambal, stirring until fragrant.
  3. Add shrimp and stir to coat them with sambal.
  4. Add asparagus, fish sauce, sugar, and water, then stir-fry until asparagus is cooked through.
  5. Serve hot.
