Stir-fried Asparagus

Ingredients

Szechuan Sauce

  • ½ teaspoon Szechuan Peppercorns
  • cup soy sauce
  • tablespoons honey
  • teaspoons sesame oil
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon Chinese cooking wine
  • 1 teaspoon garlic chili paste
  • ½ teaspoon Chinese Five Spice

Asparagus Stir Fry

  • 1–2 tablespoons peanut oil
  • 1 bunch asparagus
  • 2 tablespoons garlic, chopped
  • 1 tablespoon ginger, chopped
  • 10–15 pieces dried red chilies

Optional Garnishes

  • 2 tablespoons scallions, chopped
  • cup roasted crushed peanuts

Instructions

  1. Mix the Szechuan sauce ingredients in a bowl and set aside.
  2. Chop the asparagus, garlic, and ginger.
  3. Heat the wok over medium-high heat, add peanut oil, and stir-fry the asparagus for 2-3 minutes.
  4. Make a well in the center of the wok, add ginger and garlic, and sauté for 2 minutes until fragrant.
  5. Add the dried chilies and stir-fry for 1 more minute.
  6. Pour in the Szechuan sauce and stir-fry for another minute.
  7. Serve immediately, garnished with peanuts and scallions if desired.
