Instructions
- Mix the Szechuan sauce ingredients in a bowl and set aside.
- Chop the asparagus, garlic, and ginger.
- Heat the wok over medium-high heat, add peanut oil, and stir-fry the asparagus for 2-3 minutes.
- Make a well in the center of the wok, add ginger and garlic, and sauté for 2 minutes until fragrant.
- Add the dried chilies and stir-fry for 1 more minute.
- Pour in the Szechuan sauce and stir-fry for another minute.
- Serve immediately, garnished with peanuts and scallions if desired.
