Shrimp Asparagus Stir Fry

Ingredients

  • 10–12 ounces shrimp (raw or cooked, peeled and deveined) or pan-seared tofu
  • 2 tablespoons olive oil
  • 1 small shallot, diced
  • 4–6 cloves garlic, rough chopped
  • 10–16 ounces asparagus, tough ends removed, cut into 1½-inch pieces
  • to taste kosher salt and pepper
  • 1 small lemon, zest and juice
  • 10 leaves fresh basil, cut into ribbons
  • to taste chili flakes (optional)

Instructions

  1. Thaw shrimp in cold water, drain and pat dry.
  2. Heat oil in a large skillet over medium heat and sauté shallot until tender, about 2-3 minutes.
  3. Add garlic and cook for 1-2 minutes until fragrant.
  4. Add asparagus, stir frequently, and season with salt and pepper for about 2-3 minutes.
  5. Add shrimp to the middle of the pan, season with salt and pepper, and cook until shrimp is cooked through.
  6. Squeeze lemon juice over the mixture, toss, and cover the pan for 1-2 minutes until asparagus is tender.
  7. Adjust seasoning with salt and lemon to taste.
  8. Stir in fresh basil ribbons before serving and divide among bowls.
