Green Bean Casserole

cremini mushrooms, thinly cut

Original Triscuit, roughly chopped

vegan parmesan cheese
Instructions
- Soak cashews for at least 3 hours or overnight.
- Preheat the oven to 350°F.
- Blend cashews, water, garlic, lemon juice, seasoning, and nutritional yeast until smooth.
- Heat olive oil in a medium pan and sauté mushrooms, shallots, and garlic until mushrooms reduce by half.
- Add green beans to the pan and mix well.
- Pour the cashew cream into the beans and stir to coat.
- Transfer the mixture to a casserole dish and top with crushed Triscuit crackers and vegan parmesan.
- Cover with tin foil and bake for 30 minutes, then remove foil and bake for an additional 10 minutes.
- Serve hot.
