Ingredients

  • pounds green beans, trimmed and halved
  • 2 tablespoons extra-virgin olive oil
  • 16 ounces cremini mushrooms, sliced
  • 2 tablespoons tamari
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves
  • ¼ cup all-purpose flour
  • 3 cups milk
  • teaspoons Dijon mustard
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon freshly ground black pepper
  • cups French fried onions

Instructions

  1. Preheat the oven to 400°F and grease a 9x13-inch baking dish.
  2. Blanch the green beans in boiling salted water for 4 minutes, then transfer to ice water to cool.
  3. Drain the green beans and dry them with a towel.
  4. Sauté the mushrooms in olive oil until soft, then add tamari, garlic, and thyme.
  5. Stir in flour, then add milk and mustard, simmering until thickened for 15 to 20 minutes.
  6. Mix in Parmesan cheese and black pepper.
  7. Spread ⅓ of the sauce in the baking dish, layer with green beans, and top with remaining sauce.
  8. Sprinkle crispy onions on top and bake covered for 10 minutes, then uncover and bake for another 10 minutes.
