Green Bean Casserole

Instructions
- Preheat the oven to 400°F and grease a 9x13-inch baking dish.
- Blanch the green beans in boiling salted water for 4 minutes, then transfer to ice water to cool.
- Drain the green beans and dry them with a towel.
- Sauté the mushrooms in olive oil until soft, then add tamari, garlic, and thyme.
- Stir in flour, then add milk and mustard, simmering until thickened for 15 to 20 minutes.
- Mix in Parmesan cheese and black pepper.
- Spread ⅓ of the sauce in the baking dish, layer with green beans, and top with remaining sauce.
- Sprinkle crispy onions on top and bake covered for 10 minutes, then uncover and bake for another 10 minutes.
