Ingredients

Casserole Ingredients

  • 2 pounds green beans (trimmed, cut in half, and steamed)
  • 6 tablespoons butter
  • 8 ounces mushrooms (diced)
  • 2 cloves garlic (minced)
  • 4 tablespoons whole wheat flour
  • ½ teaspoon salt
  • to taste pepper
  • 2 ½ cups milk
  • 1 tablespoon soy sauce

Onion Topping Ingredients

  • ½ onion (peeled, cut in half, and sliced very thin)
  • ½ cup whole wheat flour
  • 4 tablespoons butter
  • to taste salt

Instructions

  1. Preheat the oven to 350°F.
  2. Melt butter in a large sauté pan over medium heat, then add mushrooms and garlic and cook for a few minutes.
  3. Stir in the flour and cook for 1 to 2 minutes, then add salt and pepper.
  4. Whisk in milk and soy sauce, scraping the bottom of the pan, and bring to a light boil until thickened.
  5. Mix the sauce with the steamed green beans in a casserole dish and bake until bubbly, about 15 minutes.
  6. For the onion topping, dredge onion slices in flour and sauté in melted butter until golden brown.
  7. Top the casserole with the fried onions before serving.
