Ingredients

  • 2 lbs fresh green beans
  • 2 tablespoons all purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons light butter
  • 2 cloves garlic
  • 1 cup reduced sodium chicken broth
  • 1 cup fat free half-and-half
  • 1 cup French fried onions

Instructions

  1. Preheat the oven to 400°F and prepare a 9x13 baking dish.
  2. Boil salted water in a large pot, add green beans, and cook for 5 minutes.
  3. Transfer the cooked beans to an ice bath to stop the cooking process, then drain.
  4. Mix flour, salt, and pepper in a small dish.
  5. Melt butter in a saucepan, add minced garlic, and cook for about a minute.
  6. Whisk the flour mixture into the butter and garlic until combined, then cook for another minute.
  7. Gradually add the broth to the mixture while whisking until smooth, then add half-and-half and simmer until thickened.
  8. Combine the green beans with the sauce and spread in the baking dish.
  9. Top with French fried onions and bake for 20 minutes, checking halfway through.
