  • 4 slices white sandwich bread
  • 2 tablespoons butter

  • 3 cups canned fried onions

The casserole

  • 2 pounds green beans
  • 3 tablespoons butter
  • 1 pound white button mushrooms
  • 3 cloves garlic
  • 3 tablespoons all-purpose flour
  • cups chicken broth
  • cups heavy cream

Instructions

  1. Preheat the oven to 425°F and prepare the topping by pulsing bread, butter, salt, and pepper in a food processor until coarse crumbs form.
  2. Combine the bread mixture with fried onions in a bowl.
  3. In a pot, boil water with salt and cook the green beans until bright green and tender-crisp, then transfer to ice water.
  4. Melt butter in the same pot, add mushrooms, garlic, salt, and pepper, and cook until mushrooms release their liquid.
  5. Stir in flour and cook briefly before whisking in chicken broth and bringing to a boil.
  6. Reduce heat, whisk in cream, and simmer until the sauce thickens.
  7. Mix the green beans with the mushroom sauce and transfer to a baking dish, then sprinkle with the topping.
  8. Bake until the topping is golden brown and the sauce is bubbling, about 15 minutes.
