Healthy Green Bean Casserole

Instructions
- Heat 1 tablespoon of olive oil in a skillet and caramelize the sliced onion.
- Steam the green beans until fork-tender, about 10 minutes.
- In the same pot, add the remaining olive oil, mushrooms, and garlic; cook until soft.
- Add parsnips and water to the mushroom mixture, boil, then cover and cook until tender.
- Preheat the oven to 350ºF and prepare a baking dish.
- Combine the cooked green beans and mushroom-parsnip mixture in the dish.
- Blend the mixture with lemon juice, salt, and nutritional yeast until smooth.
- Pour the blended sauce over the green beans, stir to combine, and top with caramelized onions.
- Bake for 30 minutes, then let cool for 10 minutes before serving.
