Ingredients

  • 1 medium yellow onion, sliced thinly
  • 2 tablespoons olive oil
  • 1 pound trimmed green beans (fresh or frozen)
  • 8 oz mushrooms, chopped
  • 3 cloves garlic, minced
  • 1 cup parsnips, chopped
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1 teaspoon fine sea salt
  • 2 tablespoons nutritional yeast (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet and caramelize the sliced onion.
  2. Steam the green beans until fork-tender, about 10 minutes.
  3. In the same pot, add the remaining olive oil, mushrooms, and garlic; cook until soft.
  4. Add parsnips and water to the mushroom mixture, boil, then cover and cook until tender.
  5. Preheat the oven to 350ºF and prepare a baking dish.
  6. Combine the cooked green beans and mushroom-parsnip mixture in the dish.
  7. Blend the mixture with lemon juice, salt, and nutritional yeast until smooth.
  8. Pour the blended sauce over the green beans, stir to combine, and top with caramelized onions.
  9. Bake for 30 minutes, then let cool for 10 minutes before serving.
