Ingredients

The casserole

  • 2 ½ pounds green beans
  • 1 medium onion
  • 8 ounces baby bella (cremini) mushrooms
  • 3 tablespoons all-purpose flour
  • 2 cups 2% milk
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • teaspoon ground nutmeg
  • 7 ounces 2% Greek yogurt

The topping

  • ½ cup whole wheat panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 4 tablespoons extra-virgin olive oil

Instructions

  1. Preheat the oven to broil and prepare a baking dish.
  2. Mix the Panko, Parmesan, parsley, and olive oil for the topping.
  3. Blanch the green beans in boiling water, then cool in an ice bath and pat dry.
  4. Sauté the onion and mushrooms in oil until soft, then add flour and cook briefly.
  5. Gradually add milk while stirring to prevent lumps, then add spices and let the sauce thicken.
  6. Remove from heat and stir in Greek yogurt.
  7. Layer half of the green beans and half of the sauce in the baking dish, then repeat.
  8. Top with the breadcrumb mixture and broil until browned.
  9. Let sit for 10 minutes before serving.
