Healthy Green Bean Casserole

Instructions
- Preheat the oven to broil and prepare a baking dish.
- Mix the Panko, Parmesan, parsley, and olive oil for the topping.
- Blanch the green beans in boiling water, then cool in an ice bath and pat dry.
- Sauté the onion and mushrooms in oil until soft, then add flour and cook briefly.
- Gradually add milk while stirring to prevent lumps, then add spices and let the sauce thicken.
- Remove from heat and stir in Greek yogurt.
- Layer half of the green beans and half of the sauce in the baking dish, then repeat.
- Top with the breadcrumb mixture and broil until browned.
- Let sit for 10 minutes before serving.
