Healthy Green Bean Casserole

Instructions
- Preheat the oven to 350°F.
- Blanch the green beans in boiling water for 6-7 minutes, then drain and rinse with cold water.
- Heat olive oil over medium-high heat, add onion and mushrooms, and cook until softened.
- Stir in garlic, salt, pepper, and nutmeg, then add parmesan cheese.
- Mix in chicken broth and almond milk.
- In a separate bowl, whisk together arrowroot powder and additional chicken broth, then add to the onion and mushroom mixture to thicken the sauce.
- Pour ¼ of the sauce into the bottom of an 8x11 baking dish, add the green beans, and pour the remaining sauce on top.
- Bake for 40 minutes.
- While baking, heat olive oil and cook shallots until golden brown, then drain on paper towels.
- Once the casserole is done, top with crispy shallots and additional parmesan cheese.
