Ingredients

The casserole

  • 3 cups green beans, washed and trimmed
  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons garlic, minced
  • 4 tablespoons butter
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon pepper

The onion topping

  • 1 medium onion, sliced
  • 2 tablespoons milk of choice
  • ¼ cup almond flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 180C/350F and grease a baking dish.
  2. In a bowl, mix the onion topping ingredients until the onions are coated.
  3. Heat oil in a skillet and fry the onion mixture until golden, about 4-5 minutes, then set aside.
  4. Boil water in a pot, add green beans, and blanch for 3 minutes. Drain and transfer to a bowl.
  5. In the skillet, add olive oil and sauté onions for 5 minutes, then add garlic and mushrooms, cooking for another 3-4 minutes. Transfer to the bowl with green beans.
  6. In the skillet, melt butter, then add broth, cream, salt, and pepper. Simmer for 3-4 minutes.
  7. Pour the sauce over the green bean mixture and stir to combine.
  8. Transfer to the baking dish, bake for 35 minutes, then top with crispy onions and bake for an additional 10 minutes until bubbling.
