Ingredients

The casserole

  • 1 pound fresh green beans
  • pound bacon
  • 3 ounces onion, minced
  • 1 clove garlic, minced
  • 4 tablespoons dry white wine or dry vermouth
  • 1 tablespoon minced parsley
  • 1 teaspoon lemon zest
  • 2 tablespoons bacon drippings or fat of choice
  • 6 ounces softened cream cheese
  • 3 ounces grated cheddar cheese
  • 1 teaspoon Worcestershire sauce
  • 1 ½ teaspoons Dijon mustard
  • ¾ cup unsalted chicken stock/broth
  • ½ teaspoon salt
  • ¼ teaspoon pepper

The topping

  • cup crushed pork rinds or low carb bread crumbs
  • teaspoon granulated garlic
  • teaspoon salt
  • 1-2 teaspoons olive oil

Instructions

  1. Preheat the oven to 350°F and butter an 8x8 casserole dish.
  2. Cook the green beans to your liking and mix them with the chopped bacon in a large bowl.
  3. Mince the onion, garlic, and parsley, and zest the lemon.
  4. In a skillet, heat the bacon drippings and sauté the onion until translucent, then add garlic and sauté until soft.
  5. Add parsley, lemon zest, and wine, cooking until the alcohol smell dissipates.
  6. Add cream cheese and chicken broth gradually, whisking until combined and melted.
  7. Stir in cheddar cheese, Worcestershire sauce, Dijon mustard, salt, and pepper, adjusting seasoning as needed.
  8. Combine the cheese sauce with the green beans and bacon, then pour into the casserole dish.
  9. Mix crushed pork rinds with garlic, salt, and olive oil, then sprinkle over the casserole.
  10. Bake for 15-20 minutes or until bubbly.
