Ingredients

  • 1 ½ pound fresh green beans, trimmed and halved
  • 4 slices thick-cut bacon, diced
  • 1 medium onion, finely chopped
  • 3-4 cloves garlic, minced
  • 8 ounce mushrooms, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup evaporated milk
  • ½ cup shredded cheddar cheese
  • ¾ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon Creole seasoning
  • 2 cups fried onions

Instructions

  1. Boil water and cook green beans for 4-5 minutes, then transfer to ice water to stop cooking.
  2. In a skillet, cook bacon until crispy, then drain oil and add onions and garlic, cooking until wilted.
  3. Add mushrooms to the skillet and cook for an additional 5-6 minutes, then remove the mixture and set aside.
  4. In the same skillet, melt butter and whisk in flour, cooking for about a minute.
  5. Gradually add chicken broth and evaporated milk, stirring to avoid lumps, and simmer until thickened.
  6. Stir in cheese and the mushroom mixture, then season with salt, pepper, and Creole seasoning.
  7. Combine green beans with the sauce and add fried onions if desired.
  8. Transfer the mixture to a baking dish, top with remaining fried onions, and bake at 350°F for 25-30 minutes.
