Ingredients

  • 4 strips bacon
  • cups sliced mushrooms
  • 2 cloves garlic
  • 1 lb fresh french green beans
  • 1 large shallot
  • 1 tablespoon arrowroot powder
  • 1 cup coconut oil
  • to taste salt
  • to taste black pepper

Instructions

  1. 1. Cook the diced bacon in a skillet until crispy, then remove and set aside.
  2. 2. Sauté the mushrooms in the bacon grease until browned, then remove from the pan.
  3. 3. Add garlic and green beans to the skillet and sauté until slightly browned.
  4. 4. Combine the bacon and mushrooms back into the skillet with the green beans, season with salt and pepper, and cook on low for 5 minutes.
  5. 5. Coat the shallots in arrowroot powder and prepare to fry them.
  6. 6. Heat coconut oil in a saucepan to 350°F and fry the shallots until browned.
  7. 7. Serve the green bean mixture topped with the fried shallots.
