Healthy Green Bean Casserole

Instructions
- 1. Cook the diced bacon in a skillet until crispy, then remove and set aside.
- 2. Sauté the mushrooms in the bacon grease until browned, then remove from the pan.
- 3. Add garlic and green beans to the skillet and sauté until slightly browned.
- 4. Combine the bacon and mushrooms back into the skillet with the green beans, season with salt and pepper, and cook on low for 5 minutes.
- 5. Coat the shallots in arrowroot powder and prepare to fry them.
- 6. Heat coconut oil in a saucepan to 350°F and fry the shallots until browned.
- 7. Serve the green bean mixture topped with the fried shallots.
