Ingredients

The base

  • 6 strips bacon
  • ½ onion finely diced
  • cups chopped button mushrooms
  • 3 cloves garlic, minced
  • 2 cans (10.5-ounce) cream of mushroom condensed soup
  • ¼ cup milk
  • 1 cup shredded Monterey Jack cheese
  • to taste salt and pepper
  • 4 cans (14.5-ounce) cut green beans, drained

The topping

  • cups French fried onions

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch baking dish with nonstick spray.
  2. Cook the bacon in a skillet over medium-low heat until crispy, then crumble and set aside.
  3. In the same skillet, sauté the diced onion in the remaining bacon grease until translucent.
  4. Add the mushrooms and cook until golden brown, then add the minced garlic and cook for an additional minute.
  5. Stir in the undiluted cream of mushroom soup and crumbled bacon, then mix in the milk and cheese until melted.
  6. Season with salt and pepper, then fold in the drained green beans until evenly combined.
  7. Transfer the mixture to the prepared baking dish and top with French fried onions.
  8. Bake uncovered for 30 minutes or until hot and bubbly.
