Fresh Green Bean Casserole with Bacon

Instructions
- Preheat the oven to 400°F.
- Prepare a baking sheet with paper towels and fill a bowl with ice water.
- Bring salted water to a boil and cook the green beans for 6 minutes.
- Drain the green beans and immediately place them in the ice bath.
- After a minute, drain again and place on the baking sheet to dry.
- Melt butter in a pot over medium-high heat, then add mushrooms, salt, and pepper, cooking for 5 minutes.
- Stir in garlic and cook for another 30 seconds, then add flour and cook for an additional minute.
- Whisk in the chicken broth, bring to a simmer, and then add heavy cream, cooking for 10 minutes until thickened.
- Stir in the green beans, all but ¼ cup of bacon, and all but ½ cup of onions.
- Transfer the mixture to a casserole dish and bake for 15 minutes.
- Add the remaining bacon and onions on top and bake for another 5 minutes.
