Fresh Green Bean Casserole with Bacon

Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons unsalted butter
  • 1 pound white mushrooms, sliced
  • 1 tablespoon minced garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • 1 ½ cups heavy cream
  • 8 ounces bacon, cooked and crumbled, divided
  • 6 ounces French’s Fried Onions, divided

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a baking sheet with paper towels and fill a bowl with ice water.
  3. Bring salted water to a boil and cook the green beans for 6 minutes.
  4. Drain the green beans and immediately place them in the ice bath.
  5. After a minute, drain again and place on the baking sheet to dry.
  6. Melt butter in a pot over medium-high heat, then add mushrooms, salt, and pepper, cooking for 5 minutes.
  7. Stir in garlic and cook for another 30 seconds, then add flour and cook for an additional minute.
  8. Whisk in the chicken broth, bring to a simmer, and then add heavy cream, cooking for 10 minutes until thickened.
  9. Stir in the green beans, all but ¼ cup of bacon, and all but ½ cup of onions.
  10. Transfer the mixture to a casserole dish and bake for 15 minutes.
  11. Add the remaining bacon and onions on top and bake for another 5 minutes.
