Fresh Green Bean Casserole with Caramelized Onions

Instructions
- Heat olive oil in a skillet and add sliced onions, salt, and baking soda; sauté until golden.
- Reduce heat and cook onions until caramelized, about 10 to 15 minutes.
- Preheat the oven to 400°F.
- In a large pot, boil water with kosher salt and parboil green beans for 3 to 5 minutes; drain.
- In a skillet, melt butter and cook mushrooms until softened, then add garlic and cook until fragrant.
- Stir in flour and cook briefly, then gradually whisk in milk and vegetable broth.
- Season the sauce with remaining salt and pepper, and simmer until thickened.
- Grease a casserole dish and layer the green beans, caramelized onions, and mushroom sauce.
- Top with fried onions and cover with foil.
- Bake for 25 minutes, removing foil for the last 10 minutes until bubbling and golden.
