Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds sweet yellow onions, sliced into thin strips
  • teaspoon table salt
  • teaspoon baking soda
  • 1 ½ pounds fresh green beans, ends snapped off
  • 1 teaspoon kosher salt, divided
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, roughly chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ¼ cups whole milk
  • ¾ cup vegetable broth
  • ½ teaspoon black pepper
  • 1 cup fried onions (such as French fried onions)

Instructions

  1. Heat olive oil in a skillet and add sliced onions, salt, and baking soda; sauté until golden.
  2. Reduce heat and cook onions until caramelized, about 10 to 15 minutes.
  3. Preheat the oven to 400°F.
  4. In a large pot, boil water with kosher salt and parboil green beans for 3 to 5 minutes; drain.
  5. In a skillet, melt butter and cook mushrooms until softened, then add garlic and cook until fragrant.
  6. Stir in flour and cook briefly, then gradually whisk in milk and vegetable broth.
  7. Season the sauce with remaining salt and pepper, and simmer until thickened.
  8. Grease a casserole dish and layer the green beans, caramelized onions, and mushroom sauce.
  9. Top with fried onions and cover with foil.
  10. Bake for 25 minutes, removing foil for the last 10 minutes until bubbling and golden.
