Ingredients

The casserole

  • 1 tbsp Avocado oil
  • 1 large Onion (chopped)
  • 10 oz Mushrooms (sliced)
  • 2 lb Green beans (cut in half)
  • 3 cup Keto Cream Of Mushroom Soup

The topping

  • ½ cup Wholesome Yum Blanched Almond Flour
  • 2 tbsp Dried minced onion
  • 1 tbsp Avocado oil

Instructions

  1. Preheat the oven to 375°F (191°C).
  2. In a skillet, sauté the onions and mushrooms in avocado oil for 7-10 minutes until lightly browned.
  3. Cook the green beans in the microwave or on the stove until crisp-tender, then drain.
  4. Combine the cooked green beans, mushroom/onion mixture, and cream of mushroom soup in a casserole dish.
  5. In a small bowl, mix almond flour and dried minced onions, then stir in avocado oil until crumbly.
  6. Crumble the topping over the casserole.
  7. Bake for 18-20 minutes until the topping is golden.
