Ingredients

The fish

  • 4 6-ounce tilapia filets

The toppings

  • ¼ cup basil pesto
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh chopped tomatoes

Seasonings

  • to taste salt
  • to taste pepper
  • to taste lemon juice
  • to taste melted butter

Instructions

  1. Preheat the broiler and prepare a baking sheet lined with foil, coated with cooking spray or olive oil.
  2. Pat the tilapia dry and place it on the baking sheet.
  3. Sprinkle 2 tablespoons of Parmesan cheese on each filet.
  4. Broil for 10-11 minutes until the fish is cooked through and the cheese is browned.
  5. Top each filet with fresh tomatoes and a tablespoon of pesto, adding more Parmesan if desired.
  6. Season with salt, pepper, lemon juice, and melted butter as preferred.
