Instructions
- Preheat the broiler and prepare a baking sheet lined with foil, coated with cooking spray or olive oil.
- Pat the tilapia dry and place it on the baking sheet.
- Sprinkle 2 tablespoons of Parmesan cheese on each filet.
- Broil for 10-11 minutes until the fish is cooked through and the cheese is browned.
- Top each filet with fresh tomatoes and a tablespoon of pesto, adding more Parmesan if desired.
- Season with salt, pepper, lemon juice, and melted butter as preferred.
