Ingredients

The fish

  • 1.5 lbs. tilapia fillets

The crust

  • 1 cup shredded parmesan cheese
  • 2 tablespoons corn meal
  • 2 tablespoons granulated garlic
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper

The binding

  • 2 large eggs
  • 1 tablespoon olive oil

The garnish

  • 1 lemon cut into slices

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with non-stick spray.
  2. Pat the tilapia fillets dry with a paper towel to remove excess moisture.
  3. In a bowl, whisk together the eggs.
  4. In another bowl, combine the parmesan cheese, corn meal, garlic, Italian seasoning, salt, and pepper.
  5. Dip the tilapia fillets in the egg wash, letting excess drip off, then coat them in the cheese mixture.
  6. Place the coated fillets on the baking sheet and drizzle with olive oil and any remaining egg mixture.
  7. Top the fillets with lemon slices.
  8. Bake for 15-20 minutes, then broil for an additional 1-2 minutes for a golden crust.
  9. Remove from the oven and serve.
