Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with non-stick spray.
- Pat the tilapia fillets dry with a paper towel to remove excess moisture.
- In a bowl, whisk together the eggs.
- In another bowl, combine the parmesan cheese, corn meal, garlic, Italian seasoning, salt, and pepper.
- Dip the tilapia fillets in the egg wash, letting excess drip off, then coat them in the cheese mixture.
- Place the coated fillets on the baking sheet and drizzle with olive oil and any remaining egg mixture.
- Top the fillets with lemon slices.
- Bake for 15-20 minutes, then broil for an additional 1-2 minutes for a golden crust.
- Remove from the oven and serve.
