Ingredients

Cashew Cookie Larabar

  • 1 cup Medjool dates (pitted)
  • 1 cup cashews (raw)
  • ¼ cup peanut butter
  • 1 tablespoon water

Granola Larabar

  • ½ cup granola (homemade)
  • ½ cup Medjool dates (pitted)
  • 1 tablespoon water

Peanut Butter Larabar

  • ½ cup Medjool dates (pitted)
  • ½ cup peanut butter

Instructions

  1. Combine dates, cashews, peanut butter, and water in a food processor and puree until the mixture starts to stick together.
  2. If necessary, add more water to help the mixture come together.
  3. Using your hands, squeeze the mixture into one big clump.
  4. Mash it down on a cutting board or wax paper to form an even rectangle shape.
  5. Slice into even squares, and store in the fridge or at room temperature.
