Peanut Butter Cookie Larabars

Ingredients

  • 1 ½ cups Medjool dates, pitted
  • 1 cup dry roasted peanuts (unsalted)
  • ¼ teaspoon sea salt

Instructions

  1. Line a standard loaf pan with parchment paper.
  2. Combine all ingredients in a food processor and process until a sticky dough forms.
  3. Transfer the dough to the lined pan and press it evenly into the bottom.
  4. Refrigerate or freeze until firm, about 2 hours.
  5. Remove from the pan using parchment paper and slice into 6 bars.
  6. Store in an airtight container in the fridge.
