Cashew Coconut Larabites

Instructions
- Grease a loaf pan with coconut oil and line it with parchment paper.
- Combine pitted dates, coconut oil, and salt in a food processor and pulse until a thick paste forms.
- Add chopped cashews and pulse until well incorporated, leaving some bits of nuts.
- Add shredded coconut and pulse again until mixed in.
- Transfer the mixture to the prepared pan and press it firmly and evenly.
- Refrigerate for a few hours, then lift from the pan and cut into 20 bars.
