Ingredients

The base mixture

  • 2-¾ cups pitted dates
  • 1 tbsp coconut oil
  • ¼ tsp salt

The mix-ins

  • ½ cup chopped dry roasted cashews
  • 1 cup unsweetened shredded coconut

Instructions

  1. Grease a loaf pan with coconut oil and line it with parchment paper.
  2. Combine pitted dates, coconut oil, and salt in a food processor and pulse until a thick paste forms.
  3. Add chopped cashews and pulse until well incorporated, leaving some bits of nuts.
  4. Add shredded coconut and pulse again until mixed in.
  5. Transfer the mixture to the prepared pan and press it firmly and evenly.
  6. Refrigerate for a few hours, then lift from the pan and cut into 20 bars.
