Coconut Cream Pie Larabars

Ingredients

  • ¼ cup chopped dates
  • ¼ cup unsweetened coconut
  • cup whole cashews and almonds (mixed)
  • ½ teaspoon Extra Virgin Coconut Oil

Instructions

  1. Prepare two pieces of plastic wrap for shaping and wrapping the bars.
  2. Roughly chop the dates.
  3. Measure the unsweetened coconut and combine it with the chopped dates in a food processor for a couple of minutes, then set aside.
  4. Add the mixed nuts to the processor and pulse until finely chopped, then mix with the date and coconut mixture along with the coconut oil.
  5. Knead the mixture with your fingers to combine well.
  6. Form the mixture into a ball and divide it into two halves.
  7. Shape each half on the plastic wrap to create your desired bar shape.
  8. Refrigerate the bars to maintain freshness.
