Ingredients

  • 1 cup dried pumpkin pieces
  • 1 cup Medjool dates
  • 1 cup walnuts
  • 1 cup almonds
  • ¼ tsp cinnamon
  • tsp ginger
  • tsp nutmeg

Instructions

  1. Preheat the oven to 200 degrees.
  2. Prepare a 2-pound sugar pumpkin by cutting it in half and removing the seeds and membrane.
  3. Peel the skin off the pumpkin and thinly slice it.
  4. Place the pumpkin slices on a greased baking sheet and bake for 45 to 60 minutes until chewy.
  5. Once cooled, add all ingredients to a food processor and blend until a uniform paste forms.
  6. Press the mixture into a loaf pan and cover.
  7. Refrigerate for at least an hour.
  8. Cut into eight pieces and store in an airtight container in the refrigerator.
