Instructions
- Preheat the oven to 200 degrees.
- Prepare a 2-pound sugar pumpkin by cutting it in half and removing the seeds and membrane.
- Peel the skin off the pumpkin and thinly slice it.
- Place the pumpkin slices on a greased baking sheet and bake for 45 to 60 minutes until chewy.
- Once cooled, add all ingredients to a food processor and blend until a uniform paste forms.
- Press the mixture into a loaf pan and cover.
- Refrigerate for at least an hour.
- Cut into eight pieces and store in an airtight container in the refrigerator.
