Ingredients

Pumpkin Layer

  • 2 cups pecans
  • ¾ cup cashews
  • ½ cup pumpkin puree
  • 8 pieces medjool dates
  • 1 tsp cinnamon
  • 3 tbsp non-dairy milk
  • a pinch sea salt

Chocolate Layer

  • ¾ cup cacao powder
  • ½ cup melted coconut oil
  • 3 tbsp Grade A Maple Syrup

Instructions

  1. Pulse the pecans, cashews, pumpkin puree, cinnamon, and sea salt in a food processor until ground.
  2. Add the dates and non-dairy milk to form a paste-like mixture.
  3. Line an 8x8 baking dish with parchment paper and press half of the mixture into the dish.
  4. Freeze the first layer for a short time.
  5. Mix the cacao powder, melted coconut oil, and maple syrup to create the chocolate layer.
  6. Pour the chocolate layer over the pumpkin layer and freeze for 10 minutes.
  7. Add the remaining pumpkin layer on top and freeze for another 30 minutes.
  8. Cut into bars and serve.
